Calamari Rings with Chilli and Garlic Sauce

Calamari Rings with Chilli and Garlic Sauce

To serve 4 as a starter or 2 as a main

  • 1/4 cup olive oil
  • 1/4 cup butter
  • 1/4 cup butter
  • 2 fresh squid tubes, sliced into rings
  • 4-6 garlic cloves (more if you’re a garlic lover)
  • 1/4 cup fresh lemon juice
  • 1 teaspoon paprika
  • 4 spring onions, sliced
  • 1/2 red capsicum, chopped
  • 1/2 teaspoon chilli flakes
  • 4 tablespoons flat leaf parsley, chopped finely
  • salt & freshly ground pepper


  • Heat the oil & butterin a large frying pan. When butter is bubbling, add the calamari rings, garlic, spring onions and capsicum & sauté quickly for 2-3 minutes.
  • Add the lemon juice, paprika, chilli flakes and salt & pepper to taste.
  • Transfer to a warmed serving dish, sprinkle with parsley and serve at once.

Serve with lots of warm crusty bread to sop up the sauce. You won’t want to waste a drop!

You could add some white wine to make a little more sauce!
