




Calamari Rings with Chilli and Garlic Sauce
To serve 4 as a starter or 2 as a main

Ingredients:
- 1/4 cup olive oil
- 1/4 cup butter
- 1/4 cup butter
- 2 fresh squid tubes, sliced into rings
- 4-6 garlic cloves (more if you’re a garlic lover)
- 1/4 cup fresh lemon juice
- 1 teaspoon paprika
- 4 spring onions, sliced
- 1/2 red capsicum, chopped
- 1/2 teaspoon chilli flakes
- 4 tablespoons flat leaf parsley, chopped finely
- salt & freshly ground pepper
Directions:
- Heat the oil & butterin a large frying pan. When butter is bubbling, add the calamari rings, garlic, spring onions and capsicum & sauté quickly for 2-3 minutes.
- Add the lemon juice, paprika, chilli flakes and salt & pepper to taste.
- Transfer to a warmed serving dish, sprinkle with parsley and serve at once.

Serve with lots of warm crusty bread to sop up the sauce. You won’t want to waste a drop!
You could add some white wine to make a little more sauce!
